The source API I am currently using is order_details, which is used to query demo trading orders. Does the order_details API currently support querying demo trading orders? I would highly recommend adding support for demo trading order queries to help me better build my system.

Yes, order_detail supports demo (paper-trading) accounts. You just need to switch to your demo account during the OAuth authorization, so the token is bound to the paper-trading account.
