fix(studio): align the mecatl-studio chart with VERSION 0.0.48 - #2295

The chart was written while VERSION was 0.0.47, and the v0.0.48 release PR merged before it, so releaseo never bumped it. main now fails TestMecatlStudioHelmChart_ReleaseMetadataMatchesVersion, and the continuous main build, which publishes only after CI passes, has never run. Set the chart's version and appVersion to the current VERSION; the next release PR keeps them in step from here. Co-Authored-By: Claude Opus 5.5 (1M context) <noreply@anthropic.com>
