docs/contributing.md stays identical to the cookiecutter template, so cruft update applies cleanly. The spatialdata-io specific guide moves to docs/contributing_io.md, listed first in the toctree and linked from the README.

Keep `docs/contributing.md` identical to the cookiecutter template so
`cruft update` applies cleanly, and move the spatialdata-io specific
guide to `docs/contributing_io.md`, linked first from the toctree and
from the README.

FYI @Zethson (otherwise contributing.md dilutes the highly-specific spatialdata-io contribution guide to the general cookiecutter guidelines).
